Notes:
How it works:
Cabbage microgreens contain vitamin K and glucosinolates — compounds that aid liver detoxification and support bone tissue formation. Mustard naturally activates these glucosinolates into isothiocyanates, which enhance the body’s natural antioxidant enzymes. Olive oil ensures absorption of these fat-soluble nutrients, improving their effectiveness and supporting metabolic balance.

Deep Dive: How These Ingredients Work Together
This microgreen coleslaw demonstrates the principle of nutrient synergy — where vitamins, fats and plant compounds interact to enhance absorption and biological benefit.
Ingredient Highlights
- Cabbage microgreens – High in vitamin K, sulforaphane precursors and polyphenols that protect bone and liver function.
- Olive oil – Provides healthy monounsaturated fats for better nutrient uptake and oxidative balance.
- Mustard – Enhances enzymatic conversion of glucosinolates, amplifying their detox-supportive potential.
- Carrots – Offer carotenoids and fibre to balance gut flora and antioxidant activity.
Mechanisms Explained
Studies from the USDA show that red cabbage microgreens contain up to six times more vitamin K and C than mature leaves. Meanwhile, Penn State Extension explains how these microgreens’ glucosinolates convert into isothiocyanates during chewing — potent molecules linked to cellular detox and antioxidant defence. Combined with olive oil, this synergy supports natural metabolic cleansing and nutrient delivery.
